I thought doing childhood favourite would be perfect, this is where my love for food started. The women in my family are nothing but amazing in the kitchen. From my mother, aunts and especially my grandmothers, I loved being in the kitchen to watch the cycle of turning just a few ingredients to dozens of ingredients into one masterpiece. Now I have been up and down about putting up my recipes, however I have decided to post them. I want everyone to be able to enjoy the amazing foods I have.
Thinking of one recipe from my childhood was very difficult, because there isn't a time I remember not having a home made treat to munch on. All this said there was only one I would go to extremes for. My Nanny's Chocolate covered Peanut Butter Balls. I remember being 5 years old, she would pick me up from kindergarten and take me to her place. I would come up with every excuse to go into her closet because I knew once in there, I could open the freezer and sneak a couple. They were simple yet the best treat I ever ate.
Chocolate covered Peanut Butter Balls
1 cup peanut butter
1/4 cup margarine or butter, softened
1 cup powdered sugar
2 cups Rice Krispies cereal
1 1/2 cups semi-sweet chocolate
2 tablespoons vegetable shortening
54 mini-muffin paper cups (optional)
1. In large electric mixer bowl, beat peanut butter, margarine and sugar on medium speed until thoroughly combined. Add rice krispies, mixing thoroughly. Portion mixture, using rounded teaspoon. Shape into balls. Place each ball in paper cup or directly on wax paper. Refrigerate.
2. Melt chocolate morsels and shortening in small saucepan, over low heat, stirring constantly. Spoon 1 teaspoon melted chocolate over each peanut butter ball (in cup), or using 2 spoons drop and roll them in the chocolate. Refrigerate until firm. Store in airtight container in refrigerator.
With the sun shining in, I knew this was the perfect 1st day
At this point, they can be eaten like this, lightly drizzled with chocolate, or completely dipped
It is difficult to make these look perfect, however I don't remember them looking like they were from a magazine. With the birthday party, it was nice to be able to share these with my family.
Tips:
Let the chocolate cool a bit before dipping, if it's too hot the peanut butter will melt and the balls won't hold their form. It may be easier to freeze them and than dip, I will be trying this next time.
I figured for childhood favourites I would use my oldest pair of shoes. These must be 8 to 10 years old, but they go with everything. They also have a thick heel and are under 3", which I have not bought in years.
Well there we go, Day 1 down, 29 to go. I am still excited to do this and keep at it. Hopefully it is still this fun on Day 15.
