Today is fudge. The main issue people have with fudge is how sweet it is, and how messy it can be to make. Well my recipe is quick, easy, and not sweet. I'm kind of embarrassed that all my recipes have been so simple so far, but once I find a recipe I like it's hard to change. I also am like everyone else, when I have important things to do I need something quick in the kitchen every now and than.
So my fudge is all done in the microwave, no boiling, melting or burning. Microwave it in one dish and pour into a pan.
Microwave Fudge
3 & 2/3 cups icing sugar
1/2 cup cocoa
1/4 cup milk
1/2 cup butter
1 tablespoon vanilla
1/2 cup chopped pecans, optional
1/2 cup cocoa
1/4 cup milk
1/2 cup butter
1 tablespoon vanilla
1/2 cup chopped pecans, optional
Combine icing sugar, cocoa, milk, and butter in a microwavable bowl. Cook on high power until butter is melted, about 2 to 3 minutes.
Stir until smooth. Blend in vanilla and pecans. Spread into a greased 8-inch square pan. Cut microwave fudge in squares when cooled.
Throw everything, except vanilla, in a microwavable bowl
The butter should be all melted, or 90% melted, before removing from microwave
Whisk everything until smooth
You can use any pan with a lip (cake, loaf, muffin, bunt, etc)
Tips:
Sift your cocoa and icing sugar to ensure no lumps. These will not melt or dissolve, and it will be very difficult to get the fudge smooth if there are little lumps.
I thought with such an easy recipe, I would use easy shoes. These black sandals go with everything; skirts, shorts, pants, capris, dresses, anything. They are the perfect little black shoe.
So there it is, 5 minute Microwave Fudge. I have to start looking in to a new recipe for my challenge coming up, I just can not decide what type of dessert I want to bake. Whether I want simple, complicated, sweet, fruity, and so on. I am sure I will find the perfect one soon.
Oh, I was laying in bed last night and noticed 2 super bright stars outside my window. I asked my dad if he knew of any planets within range tonight and he wasn't sure. So after doing some research I found out it was Venus and Jupiter. I was gorgeous just laying there looking out at them. I couldn't believe how bright they were. I wish I would have thought to take a picture.
