As a kid the best smell was fresh cookies just coming out of the oven. You could sit down and bite in to a warm chocolate chip cookie, or whichever was your favourite, and forget anything that went wrong that day and just enjoying it. I find that cookies can fix everything. I can't wait to make cookies with my nephews and nieces, my husband and than my own children. Cookies can be made so many ways that there is no stress to them.
A lot of the recipes I do are versatile, this one is no different. I decided I would make chocolate chip cookies for today's challenge. They are an old classic that are always a hit. You can swap the chocolate around with white, dark, milk, m&m's, chocolate covered nuts, etc. The nuts can also be whatever you want them to be. You can make large or small cookies, and even cookie pizzas.
Chocolate Chip Cookies
Oven 375F
1/2 cup shortening
1/2 cup granulated sugar
2 eggs
1 teaspoons vanilla
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 cup chopped nuts (walnuts or pecans recommended) Optional
1 (12 ounce) package semi-sweet chocolate chips
Beat shortening and butter together until smooth. Add sugar, brown sugar and baking soda. Beat until mix, scraping sides. Mix for another 30 seconds until smooth. Add eggs and vanilla, mix till smooth. Beat in flour until completely mixed. Add chocolate chips and nuts. Drop by the spoon full, 2 inches apart, on a greased cookie sheet. Cook 8 to 10 minutes.
If you don't use shortening, you can use all butter or all margarine
Mix everything until well combined
For regular cookies drop by teaspoon fulls
Warm cookies!
The main issue most people have is over mixing. Only mix for how long indicated in recipe. Over mixing can cause hard or flat baking. After taking cookies out of oven, let stand for a couple minutes and than remove and put on wire rack. Cookies will continue to cook on a hot cookies sheets and harden.
So I was told I am only allowed to post pictures of heels :P. So here they are. I bought these shoes to get a 3 for 1 deal, and I didn't even like them. Now they are my favourite, must comfortable, and make my legs look like they go on forever (HOT).
