Day 2 - Muffins

Today's post has been difficult, and it has nothing to do with the baking. I have an 11 month old Bearded Dragon who hates to be in his tank when he can see me. So I had him out on the floor while getting pictures and typing today's recipe, well he has become very brave and was getting into everything. So now that I finally have him relaxed I can get this show on the road.

Muffins, muffins, muffins. They can be any flavour that you can think of, just a basic muffin recipe can be modified to have anything with in it. I thought muffins would be great for Day 2, because they are so versatile. Anyone can make any type of muffin. Add blueberries, cranberries, chocolate chips, oatmeal, raisin, lemon, seeds, or a little of each. Today I chose banana, they are great warm with a little butter. I made a few with chocolate chips just have a few sweet ones around.


Banana Muffins

Oven 400F

1¾ cups flour
1/3 cup sugar
2 teaspoons baking powder
¼ teaspoon salt
1 beaten egg
½ cup milk
¼ cup cooking oil
¾ cup bananas
½ cup chopped nuts or chocolate chips (optional)

Combine flour, sugar, baking powder and salt. Make a well in center and set aside.
In another bowl, combine egg, milk, oil, and banana. Pour egg mixture into the center of the dry mixture, mix until moistened. Spoon batter into muffin cups, filling each two-thirds full. Bake 15 to 20 minutes, or until golden brown and a tooth pick can be inserted and clean when removed..

Makes 12-18 muffins.

I usually use a heaping tablespoon to fill my muffin cups


These freeze great. Make as many as you want, put them in freezer bags and pull them out when you have company.


Tips:
I used to be the person with dozens of over ripe bananas in my freezer in grocery bags. My new way, peel them and put them into a freezer bag. No more unthawing and peeling mushy bananas. You will usually end up using the whole bag anyway.



With the warm weather, I am getting in the summer spirit. These are my favorite summer heels, not too dressey for everyday, but the easily dress up jeans or shorts for dinner.


Another day down! I think more than half of my muffins are gone, I keep giving them away.



And here is the little trouble maker. He is 100% a mamas boy.

  1. I am going to ask my hubby to give this one a shot. He loves to make banana muffins. I am not sure how different this recipe would be from the one he usually follows, but I will sit back and enjoy the treat if he agrees to bake :)

    I am already thinking you should get a bakery book out!
