The worst word in the world...healthy. No one ever thinks of good food when they hear healthy. So I wanted to change that up a bit. With the gorgeous weather coming and time being spent in backyards, nothing is better than cold snacks. I have to give this one up for Mr. VIP, he always asks me what I am going to make and when I said I don`t know, he mentioned ice cream. That got my mind going. So I came up with Granita. It is basically frozen fruit juice. There is very little sugar, no dairy, and is very simple to make. This will also be a big hit with kids... big and small ;P.
Now this was originally Grapefruit and raspberries. There is someone in my house who can`t have grapefruit and I did not have juice, so I used what I had. This just shows how versatile this recipe is. Use the flavours and combinations you like.
Cranberry and Raspberry Granita
Makes 6 servings
2 cups cranberry juice (low calorie or sugar free)
1½ cups fresh or frozen raspberries (drained and thawed)
½ cup superfine sugar
In a medium bowl, combine the cranberry juice and raspberries; stir to mix well. Set a fine mesh sieve or strainer over a 1 quart freezer-safe container with a tight-fitting lid. Pour the raspberry mixture through the sieve; press the raspberries to extract as much juice as possible; discard seeds.
Add the sugar to the raspberry mixture; stir to mix well. Freeze, covered, stirring with a fork every 30 minutes after 4 hours, until frozen, about 6 hours total.
Mix the berries and juice together.
After sending the fruit through the sieve, only the seeds should be left.
It will be nice dark colour before going in the freezer.
The first stir will create small chunks throughout the juice.
The last few stirs will turn it into a thick slushy consistency.
I love serving this in wine glasses, it makes it look beautiful. You can always add a little something special for adults ;P
Tips:
The sugar is adjustable, test the flavours when you go to stir it the first time. If it is too sour, add a little more sugar. If it is a little sweet, add a little more juice or water.
So since this is my favourite recipe I have ever made, why not put my favourite shoes. I keep these shoes perfect, because I would cry if I ever had to get rid of them. They are just so unique and beautiful.
This was my first time making this recipe, it was a big hit. It is so refreshing and tastes just perfect. It will be great on the hot summer days, while relaxing outside. Thanks for the idea Mr. VIP.
